Realising it was all about attention to detail, Peter Boizot, founder of PizzaExpress, imported not only a proper Italian pizza oven but also a real Neapolitan pizzaiolo to make the pizzas. He was determined to use the best and most interesting ingredients and,on frequent tasting trips around Italy, he'd get up at the crack of dawn to explore local markets and bring back his discoveries for breakfast.

Our 'at home' pizzas are all individually handmade, using the same classic dough and signature tomato sauce that we've been using in our restaurants since 1965. We strech the dough by hand, spread the tomato sauce, place on the toppings and finish with a sprinkling of herbs. The reason we make them by hand is that dough easily gets dry and biscuity if you don't treat it gently. And because all our pizzas are made by people, not machines, each one is slightly different, just like they are in our restaurants

How to creata a PizzaExpress meal at home
To start
PizzaExpress dough balls are hard to beat, or you could try out our new garlic bread or garlic bread with mozzarella. No preparation needed, just a few minutes in the oven.
Main Course
Why not try one of our new pizzas that you can't yet get in our restaurants? Our new regional favourites use classic flavour combinations from all over Italy, with the indulgent Salami Toscana and the Funghi Piemontese perfect for a special night in. Just add a light drizzle of olive oil before cooking them. A fresh green salad is the perfect accompaniment, and a range of PizzaExpress dressings is available in supermarkets, including our famous House Dressing.
For dessert
It's got to be ice cream. Italians never go too long without a gelato.
To drink
If you feel like wine, you could try a bottle of refreshing white Pinot Grigio or some fruity Valpolicella red. If you'd prefer lager, we'd recommend Peroni Nastro Azzuro. (PizzaExpress were the first people to import this Italian classic to Britain.)
